Instructions
Whisk the orange juice, lime juice, garlic, olive oil, cumin, chili powder, smoked paprika, salt, and pepper in a bowl.
Add the steak and coat well. Cover and marinate for at least 2 hours (overnight is best).
Preheat a grill to high heat (about 450°F) or heat a cast iron skillet over high heat until very hot.
Grill or sear the steak 4–5 minutes per side for medium-rare (adjust to your preference).
Rest 5 minutes, then slice thinly against the grain and chop into bite-sized pieces.
Warm tortillas (about 20 seconds per side) and fill with steak, onion, and cilantro. Serve with lime.
Notes
For maximum tenderness, always slice skirt steak against the grain. Keep toppings simple for true street-taco flavor.
