- 4 piece large eggs
- 1 tbsp white vinegar for poaching water

Instructions
- Cut avocados in half, remove pits, and scoop flesh into a bowl. Add lemon juice, salt, pepper, and red pepper flakes. Mash with a fork to desired consistency – some prefer chunky, others smooth. Taste and adjust seasoning.
- Toast bread slices until golden brown and crispy. The bread should be sturdy enough to hold the toppings without getting soggy. Lightly drizzle or brush with olive oil while still warm.
- Fill a medium saucepan with 3 inches of water and bring to a gentle simmer over medium heat. Add white vinegar to help egg whites set. Water should have small bubbles but not be at a rolling boil.
- Crack each egg into a small cup. Create a gentle whirlpool in the water with a spoon, then carefully slide one egg into the center. Cook for 3 minutes until whites are set but yolks remain runny. Remove with slotted spoon and drain on paper towels. Repeat with remaining eggs.
